Truth be told, when I first started The Autoimmune Protocol (AIP), I searched for more recipes for treats than anything else. I had a major sweet tooth and I wanted to know I would survive! After my Celiac Disease diagnosis, I found tons of gluten free replacements and recipes, but transitioning into AIP, I wondered how was I going to celebrate my birthday without cake. I found a recipe for an AIP chocolate cake and decided to give it a try. It was so good!
When considering making a significant dietary change or transitioning into an elimination diet, people often wonder how they will celebrate special occasions or enjoy food socially. I worried about this too. I found it helpful to have recipe solutions for foods I knew I was going to miss so I never felt without or left out.
This recipe has become my favorite AIP chocolate cake recipe. My husband makes it for me every year for my birthday and made it several times when I was pregnant and on bedrest. I typically make it for the holidays as well so I have something yummy to eat for dessert. Family and friends like it too!
I celebrated my birthday this past week and got to eat this yummy cake, so I thought I would share the recipe with you. Double the recipe to make it a two-layer cake. It is more cakelike right out of the oven and a little denser after it has spent some time in the fridge. Check out the recipe A Clean Plate here. Enjoy!
